Comfort food to warm you up on those cold winters days – make lots so you can freeze portions for another time.

Brown the meat in the oil and set aside
Fry the carrots and onion for a few minutes
Sprinkle over the flour and mix in
Add the stock and Apple Juice
Return the meat, and add the mustard and bouquet garni
Cook slowly in a low oven for 2 hours (or in a slow cooker for even longer)
Serve with mashed potato and green veg.

600g Diced meat eg pork, or pheasant
200g Bacon lardons
2 Carrots, sliced
1 Onion, diced
Tblspn Flour
500ml Stock
200ml Apple Juice (Red Windsor worked well)
Tspn Mustard
Bouquet Garni / Sage
